Before you begin, get hold of a tin of Carfruit artichoke hearts.

1. Prepare the baking tin: Begin by covering the baking tin, around 20cm in diameter, with the various sheets of filo pastry. With a pastry brush, or a knife – taking greater care – glaze the sheets of pastry with melted brush

2. Prepare the filling: Add the egg, cream, chopped parsley and Herbes de Provence to a bowl. Whisk all of the ingredients together until the mixture is smooth. Once finished, season with salt and pepper to taste. Mix again and put aside the mixture.

3. The cheese, the artichokes and the baking: The artichoke hearts and the feta need to be finely diced. Mix the pieces together and pour the egg and cream mixture over the top. Now, all that is left to do is fill the casing from the first step with the mixture and sprinkle sesame seeds on top. 40 minutes in the oven at 160˚ is enough for the filling to set.
